Beneath the heavy stone vaults of Count Moltke's 17th-century palace on Dronningens Tværgade, Restaurant AOC has built one of Copenhagen's most quietly compelling dining experiences. The setting alone earns attention — low arches, centuries of history overhead — but it is the modern gastronomy rooted in carefully selected local ingredients that gives the place its real weight.

The kitchen is led by chef Søren Selin, whose tasting menus balance classic technique with new ideas. The White Guide recognised AOC at its Global Masters level in 2026, describing evenings of "embracing indulgence and genuine taste in both classics and new creations." Restaurant manager Silas Souza Neves greets guests at the door, and the tone he sets — warm, unhurried, generous — runs through the entire meal. Recently, new lighting and acoustic panels have softened the atmosphere further, making the grand vaulted space feel more intimate from the moment you arrive.

The Menus

Two formats are offered. The full AOC Tasting Menu moves through eighteen courses, each named with the spare precision that signals confidence: oyster and cabbage, lumpfish roe and potato, mackerel and green asparagus, scallop with vichyssoise, turbot in kombu with white asparagus, langoustine with cherry, morels and peas in Vin Jaune, quail in juniper, and a sequence of desserts built around gooseberry, rhubarb, plum with shiso and Szechuan pepper, and chocolate with spruce shoots. The shorter AOC Menu covers nine of those courses. Both are accompanied by a wine list drawn from producers across the world.

Private Dining

For groups between ten and eighteen, a dedicated private dining room sits just off the main restaurant behind glass doors — well suited to private parties, corporate events, or exclusive hire. The same kitchen, the same level of care.

The Two Michelin Stars AOC has retained are a measure of consistency as much as ambition. What makes the restaurant worth the visit, though, is something harder to quantify: the combination of a singular space, a chef with a clear point of view, and a front-of-house that makes a long evening feel effortless.
