A Calgary Institution Over Five Decades in the Making

On April 26, 1972, Con Giannoulis — known to most as Gus — opened Caesar's Steak House on 4th Avenue SW in downtown Calgary. He had arrived in Canada from Greece at 17, with twenty-six dollars in his pocket and a debt to his father for the boat ticket over. Starting at the bottom of the restaurant business, he worked his way up to executive chef before becoming an owner. The steakhouse he opened with three fellow Greek immigrants in an empty print shop would go on to become one of the most enduring restaurants in the city.

The formula was clear from the start: exceptionally prepared Alberta beef, professional tableside service, and an atmosphere where business got done. Caesar's earned a reputation as "the second Petroleum Club" — a place where deals were sealed over Emperor-size 3 oz. martinis and bottles of red. The saying still holds that if you want a barometer on the Calgary economy, stop by Caesar's at lunch.

The Beef, the Grill, the Spice

The steakhouse's identity is built on a single, uncompromising commitment: Alberta beef, and nothing else. Caesar's exclusive specification is aged a minimum of 28 days, cut to order, seasoned with a house steak spice that has been refined over nearly five decades, and charbroiled on an open-flame grill positioned in the middle of the dining room — an open kitchen concept that predated the trend by decades. The supplier relationship behind this beef stretches back even further than 1972, to Con's time as executive chef at another steakhouse in the late 1960s.

The menu reflects that heritage without apology. The Chateaubriand for Two is sliced tableside and served with béarnaise. Steak Diane — flambé sliced filet mignon with mushroom brandy sauce — is also prepared at the table. The Steak Anthony pairs filet mignon with a broiled Atlantic lobster tail and asparagus. For those who want to explore beyond beef, the Dover Sole Meunière is filleted tableside, and the Scampi features wild Icelandic baby lobster tails in herb-citrus demi-glacé.

Wine, Cocktails, and the Caesar Connection

Caesar's wine list has held the Wine Spectator Award of Excellence continuously since 2013, a recognition that reflects genuine investment in the cellar. The list reaches sought-after bottles like Dominio de Pingus and Château Palmer alongside a broad selection built for everyday enjoyment. Connie Giannoulis-Stuart and her husband Gerry Stuart — both International Sommelier Guild Diploma holders and partners in the business since 2005 — have deepened those winery relationships considerably, with many producers on the list visited in person.

On the cocktail side, Caesar's claims the Bloody Caesar as its own, with a slightly adjusted recipe dating to the restaurant's opening. The bar also pours an Emperor's-size martini at a full 3 ounces, barrel-aged Manhattans, and contemporary options like the Espresso Martini and French 75.

Family Stewardship, Two Locations

In 1985, a second location opened in Willow Park Village to serve the south Calgary communities where many downtown lunch regulars lived. That location received a full redesign in 2012, described as delivering a sophisticated, urban, international feel while staying true to the Caesar's steakhouse character.

Con, now in his early eighties, continues to be part of the business alongside Connie and Gerry. The philosophy hasn't shifted: unrelenting quality, professional service, and the belief that a steak dinner is a ritual worth doing properly. For generations of Calgarians, Caesar's has been the place where milestones get marked — and where the standards that earned it that reputation remain firmly in place.
