The premise is straightforward: European grill cooking interpreted through a distinctly Melbourne lens, where flame and finesse share equal billing.
Executive Chef Nic Wood brings a considered, ingredient-first philosophy to every plate. Raised in Western Australia and shaped by his grandmother's cooking and the produce-rich culture of his hometown, Wood has built his approach around humility, respect, and honesty in the kitchen. A paddock-to-plate ethos runs through everything here — underpinned by close partnerships with local producers and growers. Before returning to Australia, Wood served as Executive Chef at NeueHouse in Hollywood, bringing an international perspective that quietly informs his work at Pascale without overshadowing its local character.
The room sets the tone: equal parts luxe and laid-back, with a bar that invites you to start slowly before moving into the dining space. The Mediterranean menu is built around bold, produce-driven dishes — each plate, in the restaurant's own words, "a showstopper in its own right."
