The story

Crafted with passion, served with love

Japanese Craftsmanship in the Heart of Melbourne

Kisumé sits on Flinders Lane in the heart of Melbourne, a flagship address for serious Japanese fine dining in Australia. Part of the Lucas Collective group, the restaurant draws on the long-held Japanese tradition of hospitality — a philosophy of deep respect for ingredients, precise technique, and considered generosity toward guests.

The kitchen operates with an eye firmly on seasonality, building menus around the evolving richness of Australia's land and sea. That local grounding, filtered through Japanese culinary discipline, gives Kisumé its distinctive character: neither purely imported nor merely fusion, but something more deliberate and assured.

The Chef's Table

The centrepiece of the Kisumé experience is the Chef's Table — an intimate, multi-course format that runs Tuesday to Saturday. Guests are invited to put themselves entirely in the hands of the kitchen, surrendering to a sequence of courses that reflects the creative freedom and technical mastery at the core of the restaurant's Japanese cooking.

Tuesday through Thursday evenings feature a 14-course menu, while Fridays and Saturdays step up to an 18-course format, with supplementary dishes available for those who want to go further. It is the kind of format that rewards curiosity and patience, and one that has earned Kisumé recognition beyond Australia's borders — including a Wine Spectator Best of Award of Excellence, a mark of distinction that speaks to the seriousness of both the food and the wine programme.

Dining Day to Day

Beyond the Chef's Table, Kisumé is open for dinner seven days a week and for lunch Tuesday to Sunday. Lunch is served à la carte, while larger dinner groups of ten or more dine on the Chef's Tasting Menu. A smart casual dress code applies, and a 10% Sunday surcharge is in place — standard signals of a room that takes its setting seriously without being unwelcoming.

For private events, the venue offers dedicated private dining arrangements, making it a considered choice for occasions that call for something more than a standard restaurant booking.
