Nestled in the vibrant heart of Copenhagen, Tèrra invites you to a dining experience that blends Italian heritage with sustainable innovation. Founded by Chef Valerio Serino and Lucia De Luca, this intimate gem redefines conscious dining with a focus on zero waste and creativity.

A Journey Rooted in Earth

Eight years ago, Tèrra was born from the desire to redefine conscious dining—proving that sustainability, zero waste, and creativity could not only coexist, but truly thrive together. From the heart of Copenhagen, cradle of the New Nordic Cuisine, we’ve helped inspire a growing global movement toward mindful consumption and waste-free gastronomy. Though shaped by the rhythms of the North, Tèrra has never been bound by geography. Not entirely Nordic, nor strictly Italian, we’ve always followed a path of exploration—guided by intuition, emotion, and deep respect for the natural world. Over time, we’ve found our voice—raw, imperfect, sensitive, and deeply rooted in the earth. Now, that voice is calling us home. This new chapter marks a return to our terra madre—a reconnection with a different rhythm of nature.

Culinary Philosophy and Standout Dishes

At Tèrra, the cuisine is a no-label celebration of nature, drawing inspiration from Italian traditions with creative twists. Chef Valerio Serino crafts dishes that maximize ingredients, transforming scraps into beauty through ingenuity. Embrace the Mediterranean diet at its core—rooted in vegetables, fruits, cereals, legumes, with fish and meat in moderation. Standout offerings include formidable olive oil from Lazio paired with rustic sourdough bread, a snack of fried kale with reduced yellow tomato dip, and an innovative amatriciana featuring spaghettone pasta, braised pork cheek, pureed borlotti beans, bell pepper, and tomato powder. The meal flows with greens, exquisite pasta, and tender rump steak served simply with green long beans and browned butter cream. Paired with excellent natural wines selected by Lucia, each bite honors pure Italian flavors while pushing boundaries without pretension.

Tèrra's manifesto is clear: Food is life! It is a gift by mother nature that we don’t want to waste. Creativity is the tool to play our role, maximizing recycling, minimizing waste, and turning it into new dishes. We've earned a Green Star in the Michelin Guide since 2021 for our commitment to seasonal, local products from regenerative farming, conscious buying, plastic reduction, and innovative reuse—like turning coffee grounds into kombucha or compost. Additionally, the White Guide recognizes Tèrra at a Very Fine Level for 2025, praising our genuine, top-notch Italian cuisine paired with natural wines. These accolades highlight our dedication to a sustainable cuisine that inspires respect for the earth.

I hyggelige rum, der lige så godt kunne have ligget i hjertet af Rom, sørger designeren Lucia de Luca og hendes dygtige kok og kæreste Valerio Serino for, at du får et genuint og topvelsmagende måltid med gode naturvine til. Stilen er anderledes, end man ellers oplever det på den stribe af traditionelle og gode italienere, København efterhånden er udstyret med. Retterne er nemlig tvistet, uden at det ender i dippedutmad og vrangforestillinger om, hvad italiensk mad skal kunne, som man faktisk nogle gange kan opleve det netop i Rom. Eneste knast er, at her kun er een relativt stor menu. Råvarerne taler deres eget skønne sprog. En af de mest formidable olivenolier, mild og frugtig fra Lazio, til at dyppe det rustikke surdejsbrød kommer på bordet med vand og en snack af friteret grønkål og en reduceret dyppelse af gule tomater. Smagen er ren Italien trods grønkålen. Køkkenet er glad for støv, men støvet er lavet på de rene varer med italienske undertoner. Rød peber, tomat eller kapers. Det er de urørlige klassikere, der metodisk forskydes blot en smule som amatricianaen, hvis pasta var spaghettone – altså store spaghetti – med økologisk braiseret svinekæbe, en sauce af purerede borlottibønner, peberfrugt og tomatpulver. En smørmør blødhed samtidig med at pastaen er al dente. A match made in heaven. Måltidskompositionen er som i hjemlandet med meget grønt, en god pasta og lidt, men udsøgt kød af rumpsteak, der helt enkelt serveres med grønne langbønner og lidt creme af brunet smør. Der er en vinmenu, men Lucia finder med glæde en vin, der kan matche gæstens ønsker. Du føler dig forkælet og på rejse i et skønt univers, der placerer Tèrra i toppen af meget god klasse.

In cozy rooms that could just as well be in the heart of Rome, designer Lucia de Luca and her talented chef and partner Valerio Serino ensure you get a genuine and top-notch meal paired with excellent natural wines. The style is different from what you typically experience at the strip of traditional and good Italian spots that Copenhagen is now equipped with. The dishes are twisted in creative ways, without descending into pretentious nonsense and misconceptions about what Italian food should be—something you can actually encounter in Rome itself at times. The only hitch is that there's just one relatively large menu. The ingredients speak their own beautiful language. One of the most formidable olive oils—mild and fruity from Lazio—for dipping the rustic sourdough bread arrives at the table with water and a snack of fried kale plus a reduced dip of yellow tomatoes. The flavor is pure Italy despite the kale. The kitchen loves dust, but the dust is made from clean ingredients with Italian undertones. Red pepper, tomato, or capers. These untouchable classics are methodically shifted just a bit, like the amatriciana, whose pasta was spaghettone—big spaghetti—with organic braised pork cheek, a sauce of pureed borlotti beans, bell pepper, and tomato powder. A creamy tenderness alongside pasta that's perfectly al dente. A match made in heaven. The meal composition is like back home, with lots of greens, good pasta, and a little but exquisite meat from rump steak, simply served with green long beans and a bit of browned butter cream. There's a wine menu, but Lucia happily finds a wine to match the guest's wishes. You feel pampered and on a journey in a beautiful universe that places Tèrra at the top of a very good class.
