Where the Mediterranean Meets Copenhagen

On Jægersborggade in Copenhagen's Nørrebro neighbourhood, Silberbauers Bistro has taken over the address once occupied by the beloved Manfreds. The man behind it, Mathias Silberbauer, brings with him experience from a highly acclaimed restaurant in Nice — and that southern French sensibility runs through everything on the plate.

The Food: Seafood-Led, Flavor-Driven

Fish and shellfish dominate the menu, though never as a rigid rule. The approach is instinctive and seasonal: a chalkboard of daily dishes shifts with what's best, and Silberbauer himself will often suggest ordering several starters to share before settling on a single main course together. It's a generous, convivial way to eat, and it works.

The cooking leans into simplicity at its most confident. Steamed mussels served cold, each shell holding a dab of garlic mayo. Cod sashimi darkened and marinated in a mild orange-chili dressing that wakes the palate without overwhelming it. Whole fried sardines — crispy-skinned, finished with lemon, salt, and parsley — are a study in restraint. The restaurant's vongole with spicy nduja sausage delivers pure umami with real edge, while whole grilled scampi arrive with a warm pesto for dipping.

When summer sea bass is in season, it makes a natural centrepiece: served with a classic Provençal lentil preparation and Danish grilled green asparagus, it captures exactly what Silberbauers does best — Mediterranean spirit, Nordic ingredients, no fuss.

Desserts follow the same logic. A lemon tart and a vanilla-filled crème brûlée offer classic precision rather than novelty.

Wine and Recognition

The wine list is an extension of the kitchen's philosophy — natural and biodynamic bottles, guided by knowledgeable staff. A white Karnage Plouk Blanc 2020, made from ploussard (a grape more commonly used for light reds), arrived with a nose that surprised and a palate of bright acidity that cut through the richness of the seafood perfectly.

The White Guide awarded Silberbauers Bistro its Very Fine Level recognition for 2026 — a reflection of what the restaurant consistently delivers: high-quality raw ingredients, every bite packed with flavor, and an atmosphere that makes Mediterranean cooking feel entirely at home in Copenhagen.

It isdifficult to choose from the board of today's dishes, but fortunately Mathias Silberbauer saves us with the suggestion to order several starters and then share a main course. Every single bite is packed with flavor from high‑quality raw ingredients. Fish and shellfish dominate the menu, but not as a dogma; since we are in the short season for summer sea bass, our choice of main course falls on that. It is served with a classic Provençal lentil side dish and Danish grilled green asparagus. The former Manfreds on Jægersborggade is now taken over by Silberbauer, who previously worked, among other things, at a highly acclaimed restaurant in Nice. Therefore it is pure gastronomy when, as appetizers, we choose the steamed mussels served cold with a garlic mayo in each little shell, and then continue with a dark torsk (cod) sashimi marinated in a mild orange‑chili dressing, which just opens the taste buds. The sea‑freshness arrives in the large, beautifully whole fried sardines – served with lemon, salt and parsley over the crispy fried skin. Simplicity when it is best. The restaurant’s famous vongole with the spicy nduja sausage is pure umami with edge, and the large whole grilled scampi come with a good warm pesto to dip the sweet, firm protein into. But there is more than that. In addition to the classic purity of the desserts, which also offers excellent lemon tart and vanilla‑filled crème brûlée, there is an exciting wine list featuring natural and biodynamic wines. With knowledgeable guidance we choose a white wine, Karnage Plouk Blanc 2020, made from ploussard, which is normally used for light red wines; the nose gives what one expects, while the light (almost orange) wine in the mouth provides acidity and the freshness that the fish dishes call for. An exceptionally successful journey to the best of the Mediterranean in an affordable and exceptionally Very Good Class.
