For many years, Lumskebugten was shaped by Erwin Lauterbach, widely regarded as the godfather of the vegetable-forward approach in Danish fine dining. When Lauterbach stepped away after a long and defining tenure, chef Andreas Möller took over — and did so with confidence. The transition has been anything but a dilution. The restaurant serves lunch Monday through Saturday and dinner Wednesday through Saturday, with a dedicated Sunday lunch as well — a schedule that reflects a kitchen working at full intensity rather than coasting.
