The story
Some restaurants chase trends. Formel B, on Vesterbrogade at the edge of Frederiksberg, has spent more than twenty years doing something harder: staying genuinely excellent. The White Guide awarded the restaurant its Masters level distinction in 2026, noting that it is "something as unusual as a restaurant that has kept the gastronomic flag flying extremely high for 20 years." That kind of consistency is rare in any city, and particularly so in Copenhagen, where the dining landscape shifts constantly.
The restaurant is the work of Rune Jochumsen and Kristian Arpe Hansen, a partnership that the White Guide describes as having "created and renewed" Formel B over the course of two decades. The word renewed matters here — longevity at this level is not a matter of standing still. The White Guide specifically calls out "an eye for the very best ingredients and, above all, the utmost deliciousness" as the defining qualities of what the duo have built.
Formel B serves Danish cuisine in the fine dining register, with wine pairing available and a wine bar that draws guests who are not necessarily sitting down for a full meal. The restaurant accommodates private parties and events, with dedicated private rooms alongside the main dining room — a setup that makes it a considered choice for occasions that warrant a serious table.
What the sources make clear, without needing embellishment, is that this is a place where Danish cooking is treated as a genuine discipline rather than a backdrop. Over twenty years, that seriousness has earned recognition that few restaurants in the country can match.
