Since opening in 2017, Choux Gras Brasserie has earned its place as one of the most sought-after addresses in the Laurentians. Perched above the pedestrian village of Tremblant with views sweeping across the ski slopes, the restaurant draws on the spirit of Montreal's great brasseries — generous, convivial, and serious about what lands on the plate. Its vintage "New Retro" interior strikes a balance between warmth and a certain glittering energy that suits both a quiet romantic dinner and a lively evening with friends.

A French Kitchen Rooted in Local Terroir

The French cuisine at Choux Gras is shaped by Québec's larder as much as by classical technique. Homemade bread arrives warm from the kitchen — a tomato-garlic focaccia or a brioche with caramelized onions and herbes de Provence — setting the tone for what follows. Starters lean into local character: a Laurentides goat cheese crottin with apple chutney and honey, a scallop ceviche brightened with sea buckthorn berry and ice cider, or a foie gras opera with cacao sauce, caramelized pear and golden brioche. Shareable platters — a whole grilled seafood board, beef short ribs braised in beer and maple, a Cornwall chicken stuffed with fine foie gras — reward tables that come with appetite and time.

Main dishes show the same attention to detail: black cod over braised beluga lentils with chorizo and squid ink tuile, sous-vide veal cheek with truffle oil mashed potatoes, and a surf-and-turf of filet mignon and lobster tail finished with Bordelaise sauce. The pastry team contributes desserts that feel distinctly of this place — a sugar tartlet with maple crème brûlée, an iced nougat with red berry coulis, a chocolate mousse with cocoa nibs.

A Wine List Worth the Detour

The wine program is one of the brasserie's defining strengths, and the Wine Spectator Award of Excellence it earned reflects the care behind it. More than 225 references anchor the list, with over half sourced through private imports. Sommelier Etienne Lachaîne and the service team guide guests through the selection with the kind of ease that makes the evening feel effortless rather than instructive.

Beyond the main dining room, the Axe Lounge Bar offers a more relaxed setting with its own menu — oysters, tartares, a poutine, a well-built burger — alongside inventive cocktails like the Maple Old Fashioned (Lot 40 whiskey, Hennessy, maple syrup) or the Purple Rain with Empress gin and lavender. Thursday jazz evenings, starting in June, add another layer to the atmosphere. Valet parking at the adjacent Fairmont Tremblant is complimentary during your meal — a small detail that reflects the overall level of consideration here.
