Paesano Pizza holds a straightforward claim: it was the first to bring authentic, traditional Neapolitan pizza to Glasgow. That founding conviction still shapes everything about the place – the tight menu, the sourcing, the ovens.

The Neapolitan Obsession

Every element of the pizza-making process traces back to Naples. The wood-fired ovens are designed and built there. The Pizzaioli who work them trained in the same tradition. Ingredients – from the fior di latte mozzarella and DOP San Marzano tomatoes to the Spianata Calabrese salami and Tuscan fennel sausage – are sourced directly from Italy. The dough is proofed for over 24 hours, then cooked at 500°C, producing what Paesano describes as a moist, light, soft and digestible crust that's aromatic rather than bready. Gambero Rosso, the authoritative Italian food guide, recognised this commitment with a 1-slice award in 2020 – significant recognition for a Scottish pizzeria measured against Italian standards.

The Menu

Ten numbered pizzas form the core, from the stripped-back No. 1 (tomato sugo, garlic, oregano, extra virgin olive oil – vegan, dairy-free) to the No. 10 with spicy Ventricina and 'Nduja sausage. In between: a Margherita with buffalo mozzarella and Parmigiano Reggiano, a puttanesca-style with capers, olives and anchovies, and a white pizza built on spinach, ricotta, smoked scamorza and garlic trifolati mushrooms. Rotating specials add variety without bloating the offer. Sides lean Italian – burrata caprese, Nocellera olives, an antipasto of Italian meats – and the dipping sauces for the crust (spicy 'Nduja mascarpone, truffle aioli, hot chilli honey) have become something of a signature detail. Desserts include cannolo, tiramisù and affogato.

How It Works

Paesano operates a walk-in policy across all its Glasgow locations – no reservations, no pre-orders. The West End site on Great Western Road is one of three in the city, alongside Miller Street in the city centre and Pollokshaws Road in the Southside, with a fourth location on Edinburgh's George Street. Half-portion pizzas are available for children, high chairs are on hand, and all sites are wheelchair accessible. The atmosphere is unfussy and communal – the kind of room where the queue moves quickly and the pizza arrives fast.

The Neapolitan pizza here isn't a concept; it's a process, repeated carefully, every service.
