The Gambero Rosso distinction signals that the kitchen is doing something genuinely worth noting, not just serving pasta in a city full of restaurants.
The menu draws on traditions from across the Italian peninsula rather than any single region, and the range is generous. Antipasti lean on serious Italian charcuterie — 24-month Parma prosciutto DOP, Culatta di Benevento, Bresaola di Toro — alongside cheeses like Caciocavallo, smoked Burratina, and Pecorino Sardo DOP. Focaccia is made in-house.
Pasta is treated with the seriousness it deserves. The handmade section carries a quiet declaration: "le paste fatte in casa sono fatte con amore" — homemade pasta is made with love. Highlights include Agnolotti del Plin filled with pork and veal in veal jus, Pappardella with slow-braised oxtail ragù, and Linguine ai Frutti di Mare loaded with langoustine, prawns, mussels, clams and squid. The carbonara uses guanciale and pecorino, as it should.
The pizza section is built on San Marzano DOP tomatoes and proper fior di latte, with options ranging from a simple Marinara to the Fuoco di Calabria — 'Nduja, Calabrian salami, Taggiasca olives and dried Puglian tomatoes — and the showpiece "Un pugliese a Parma," topped after baking with smoked burratina and coppa di Parma.
Desserts are entirely homemade, made by the in-house pastry chef Vincenzo, who is also available for private events. The tiramisù is billed as "il classico della zia" — auntie's classic — and house-made gelato and sorbets round out a list that takes sweets seriously.
Located on Avenue de Champel in Geneva, Osteria Zaza offers outdoor seating alongside its dining room, and the space accommodates private parties. Lunch and dinner service runs Tuesday through Saturday, making it a reliable option for both a midweek lunch and a relaxed weekend dinner.
