The story
Nestled aboard EXPLORA I, Anthology is not simply a restaurant — it is an invitation to rediscover Italy. Under the creative vision of Franck Garanger, EXPLORA's head of culinary, the dining experience unfolds as a seven-course Italian-inspired menu that traces the country's most celebrated regions: the sun-drenched shores of Sicily, the earthy hills of Piedmont, and the fragrant coastline of Amalfi. The result is a culinary journey where tradition and innovation meet in perfect harmony.
Garanger's approach to Italian cuisine is one of deep reverence and playful creativity. Each dish honours the simplicity of its ingredients while elevating them to something entirely new. A meticulously crafted ravioli, stuffed with langoustines and set afloat in a San Marzano tomato consommé with sage butter, captures both freshness and refinement. Elsewhere on the menu, Oscietra Royal caviar, butter-tender Wagyu beef, wild lobster, and black truffles from Piedmont lend an unmistakable sense of luxury to the Italian-inspired framework. The meal concludes on a sublime note with the signature millefoglie — pillowy vanilla cream sandwiched between two caramelised crisps of dough, almost too beautiful to eat.
The interiors of Anthology are as considered as the cuisine itself. Featuring clean, simple lines with neither fussiness nor formality, the bright and airy indoor space seats 48 guests in an atmosphere that feels both sleek and intimate. An additional outdoor terrace accommodates 22 diners, offering the rare pleasure of enjoying Italian-inspired fine dining with ocean air and the shimmering Mediterranean as a backdrop. The restrained elegance of the setting creates the perfect canvas for the artistry on every plate.
Service aboard EXPLORA I — and at Anthology in particular — is widely regarded as a benchmark of attentiveness and discretion. The waitstaff are equally at ease accommodating guests with dietary restrictions as they are guiding diners through the nuances of the tasting menu, ensuring every guest feels both cared for and unhurried.
Anthology has earned a Forbes Travel Guide Recommended distinction for 2026, a testament to the restaurant's ability to pull off a genuinely bold feat: making Italy's most beloved culinary traditions feel thrillingly new.
