Perched above the Ayung River Valley at the Four Seasons Resort Bali at Sayan, Ayung Terrace offers one of Ubud's most striking dining settings — open to the jungle canopy, with the river valley stretching out below. The views are extraordinary, but they are matched by what arrives at the table.

Chef Wayan Sutariawan and the Food He Grew Up With

The kitchen is led by Head Chef Wayan Sutariawan, whose path to cooking began at fifteen, grinding spices daily in his aunt's home. That early immersion in the flavours of the Indonesian archipelago shapes everything he does here. His cooking honours authentic regional traditions while refining them for the setting — what the restaurant describes as "authentic flavours with a modern twist."

The signature dishes tell that story clearly. Babi Guling — spice-rubbed pork belly with sautéed pumpkin leaf — is a Balinese classic treated with precision. Rendang Sapi brings slow-cooked beef cheek in a Sumatran coconut sauce with cinnamon and corn perkedel, a dish rooted in West Sumatra's culinary heritage. Lombok Lobster arrives with thousand spices, morning glory and raw sambal, while Gurita Panggang — coconut-smoked octopus with chilli sambal, grilled pineapple and steamed corn — shows the range of the Indonesian kitchen in a single plate. Kalio Udang, chargrilled prawns with turmeric chilli sauce, young mango and local herbs, rounds out a menu that moves confidently across the archipelago.

Ayung Terrace serves across the full day — breakfast from early morning, lunch through the afternoon, and dinner into the evening. The wine programme has earned the Wine Spectator Award of Excellence, recognition that reflects a list carefully matched to the complexity and spice of Indonesian cuisine.

The combination of Chef Sutariawan's deeply personal cooking, the treetop setting above the Ayung River, and a wine programme strong enough to earn international recognition makes this one of the more complete dining experiences in Ubud.
