The concept is deliberately transitional: by day the open-air space carries the relaxed ease of a boathouse; by night it shifts into a livelier, high-energy rhythm that draws both hotel guests and Bali regulars back repeatedly.
At the heart of the show kitchen, Basque grills are the defining piece of equipment — flame-cooking the freshest seafood and premium dry-aged meats sourced from the world's most trusted suppliers. The approach is direct and honest: quality ingredients, live fire, and precise execution.
The menu moves from ocean to land with equal confidence. Fresh oysters and seafood on ice open proceedings, while Bali lobster represents the kitchen's flagship statement. Premium dry-aged cuts hold their own alongside the seafood, and the kitchen's bento boxes — available weekday lunchtimes — offer a more composed, Japanese-inflected format, with options ranging from a vegetarian selection through to a teriyaki salmon and sashimi combination.
Guests have singled out the burrata, tenderloin yakiniku, and coconut parfait as personal standouts, and the Sunday brunch — a spread of grilled meats, signature Basque grill specialties, and free-flow beverages — draws a loyal weekend crowd.
