The story
Kakolanruusu — "the rose of Kakola" — sits inside the former prison walls of Kakolanmäki Hill in Turku, a neighbourhood that has transformed from one of the city's most forbidding addresses into one of its most vibrant. The restaurant first opened as a pop-up on May Day 2017, and by May Day 2019 had moved into permanent, top-notch facilities in the Yöselli ("night cell") building. That origin story is not just atmosphere: the granite walls and vaulted spaces of the old prison genuinely shape the experience. You arrive by funicular from Linnankatu, pass through the old main gate, and step into a room that carries real history.
The White Guide has recognised Kakolanruusu at Fine level, a distinction that reflects both the kitchen's ambition and the singular setting that frames it.
Executive Chef Matti Roiniola and Head Chef Santeri Lahdenperä lead a kitchen that has made open fire its defining principle. A 140 cm wide hearth handles carefully selected seasonal produce, and the results have been described as gourmet barbecue — though the team simply calls it soulful. Everything is made by hand from scratch, with all meat sourced from Finland and produce drawn from local and organic suppliers where possible. Salads come from Lindroth's garden; bread arrives from Bageri Å next door.
The menu is built around sharing. Small plates — smoked rainbow trout with green asparagus and lemon mayonnaise, beef tartar with bone marrow and togarashi-lime mayonnaise, deep-fried carbonara with cheese sauce — are designed to move around the table. Larger plates such as grilled Iberico pork with chimichurri or roasted cauliflower with shio koji and beluga lentils anchor the meal. For those who want the full experience, Kakola's Feast offers several cold and warm courses served in sequence, with optional wine pairings chosen by Head Sommelier Jenni Oksa from a list that ranges from natural wines to cellar rarities.
Beyond the dining room, Kakolanruusu operates a lounge bar where no reservation is needed. On Friday and Saturday evenings, rotating DJs play beside a fireplace, and the bar team — led by Bar Managers Jonni Leppänen and Miika Virtanen — puts seasonal ingredients into classic cocktails. Bar snacks, oysters and a cheese plate keep things going late into the evening.
The restaurant holds both a Sustainable Travel Finland recognition and a Green Key environmental certificate, commitments that run through sourcing, waste reduction and supplier relationships. A brewery, bakery and coffee roastery on the same hill supply ingredients served at the table, making the hilltop a small, self-reinforcing food community.
Kakolanruusu is, in the end, a place shaped by its past and run by people who clearly enjoy what they do — a fine dining destination that takes its cooking seriously without taking itself too seriously.
