The White Guide has recognised it at "Very fine level," noting a kitchen rooted in the French-heritage traditions of top establishments like Søllerød Kro and Bistro Boheme, reinterpreted through a firmly Nordic lens and delivered with robust, honest flavour.

Berlingske critic Svend Rasmussen put it plainly: "The food is precise in the preparation, stringy in the expression and with plenty of deep flavor." That precision is the through-line here — not showmanship, but cooking that knows what it wants to be.

The Philosophy Behind the Plate

Mark's kitchen works from a straightforward premise: source the best from the land and water nearby, then let the seasons do the talking. Producers — farmers, fishers, brewers, dairymakers — supply a Danish larder that shifts with the calendar. The restaurant describes its approach as treating food as an extension of nature's cycle, where seasonal change and local growing conditions shape both the menu and the technique.

The result is a Nordic bistro cuisine that feels grounded rather than trend-chasing. A MICHELIN-recommended almanac kitchen, as they call it, built on what's good right now.

What's on the Menu

Lunch runs from a tight, well-priced set menu — two or three dishes delivered within 45 minutes — to a broader à la carte that covers everything from a classic beef tartare with French fries to Rømø oysters, mussel toast, and a potato on rye that anchors the smørrebrød tradition. Snacks lean into bistro pleasure: blue mussel Rockefeller, devil's eggs with parmesan and truffle, deep-fried Gordal olives with n'duja.

In the evening, the kitchen composes a daily five-course menu at 495,- DKK — pure bistro style, written on the blackboard — alongside à la carte classics and seasonal dishes. Expect combinations like scallop with ajo blanco and snack cucumber, monkfish with elderflower and sesame, or beef short ribs with green asparagus and nettles. A côte de boeuf and a beef tenderloin with pepper sauce and frites anchor the more indulgent end of things. Desserts include a pavlova with strawberry and white asparagus ice cream, and a French toast with blackberry and goat's milk ice cream.

The wine list is curated with equal care — recognised by Star Wine List — with two or three special bottles offered by the glass each month, and a sommelier on hand to guide the pairing.
