Here you will taste both pear, banana, and dried peach with an oily mineral quality and a hint of green anise. Peach goes wonderfully with rosehip leaves, which lie at the bottom of the cod serving with fennel and sweet pepper, matching the anise aftertaste. We taste the golden wine Bréze from Louis Cheze, 2023, from Condrieu in the Northern Rhône and nod approvingly, as we also take a forkful of the juicy cod with the rosehip sauce. It really matches!
