A restaurant with character

Bobe is, by its own definition, a restaurant with character. The vision belongs to chef Bo Bech, and so do the values that give it shape: romantic, honest, playful, generous. Those aren't decorative words — they show up on the plate and in the room. Bo Bech has been cooking professionally for over thirty years, and at Bobe he works in what the restaurant calls his own language, one formed through decades in restaurant kitchens and a curiosity about the wider world.

The setting reinforces that sense of depth. Bobe occupies a listed building from 1731 on Gråbrødretorv, one of the oldest squares in central Copenhagen. The layers of history in those walls, as Bech has said himself, both inspire and humble.

What the White Guide noticed

The White Guide awarded Bobe Masters level recognition in 2026 — and the citation goes straight to the point: Bo Bech does something particular with flavour. He brings something new to otherwise classical dishes without tipping into the merely fashionable. The example the guide reaches for is a venison tartare with chopped beetroot, given edge by a well-balanced smoked soy. That balance — familiar but sharpened — is a reliable thread through the cooking here.

The menu

The menu is organized into four movements. Returning favourites opens things up with dishes like raw langoustine with yuzu and hibiscus, or scallop and chicken wings with langoustine bisque. A glimpse of the garden is where vegetables take the lead — steamed white asparagus with elderflower and saffron, carrots braised with rhubarb and basil, soft ricotta gnocchi in tomato sauce with habanero.

What matters is the main event: breaded mackerel with sea kale and nettles, fried turbot with fennel ravioli on gruyère, charred heart of lamb with cherries and wood sorrel, or a pepper steak of ribeye with golden fries. Echo closes with desserts that carry the same quiet inventiveness — liquorice ice cream layer cake with morels, potato profiterole with coconut sorbet and hazelnuts, caramelized bread with black cardamom ice cream.

Finger food, a cheese selection of Danish and international varieties, and a full bar and wine list round out the offer. The restaurant also serves smørrebrød at lunch, and the space — which can seat up to 80 for dinner or host 200 for a reception — is available for private events.
