Where the Alchemists' Ambition Meets the Dinner Table

Behind two-tonne bronze doors on the industrial waterfront of Refshaleøen, Alchemist operates on a premise that is both simple and radical: food and dining can be transformed into something that transcends the meal itself. The restaurant takes its name seriously. Just as historical alchemists sought to purify and perfect physical matter, head chef and mastermind Rasmus Munk aims to do the same with the act of eating.

The result has placed Alchemist consistently inside the World's 50 Best Restaurants — ranked as high as #5 — and earned the White Guide's Global Masters designation, whose jury described the experience as "a critical yet life-affirming relationship to the way we interact with food and food production."

Fifty Impressions, One Evening

There are no courses at Alchemist — only impressions, up to fifty of them, delivered across several acts and multiple physical spaces over four to six hours. The menu is rooted, as the restaurant puts it, in "classic techniques, modern research and Chef Munk's obsessive search for the best ingredients." Expect Space Bread canapés topped with caviar, the finest seafood, and pigeon aged in beeswax, alongside purely experiential moments that engage curiosity as much as appetite. One notorious impression — cherry meringue filled with lamb's brain mousse, served in a realistic mould of a human head — sums up the tone: precise, provocative, and oddly joyful.

Guests dine beneath a dome-shaped ceiling whose graphic sceneries shift throughout the evening, creating an atmosphere that is theatrical without being gimmicky. The restaurant itself asks guests to "arrive with your mind open" and acknowledges plainly that Alchemist "might not be the right choice for an evening of business discussions or that first nervous date."

Holistic Cuisine with a Conscience

The holistic cuisine philosophy extends well beyond the plate. Through its food innovation centre SPORA, Alchemist conducts ongoing research into novel ingredients — insects, fungi, herbs — that guests may encounter as part of the evening. Munk also uses the restaurant's global attention to fund initiatives feeding homeless people in Copenhagen and developing clean water solutions in Africa.

The Beverage Programme

Six distinct pairings accompany the menu, from the Essential — focused on lesser-known grape varieties and terroirs — to the Exclusive, built around rare bottlings and mature vintages from iconic producers. The Botanica non-alcoholic pairing draws on the restaurant's own fermentation department: water kefir, kombucha, and lacto-fermented beverages deepened with juices, herbs, and spices. For those who want total immersion, the Sommelier Table experience adds constant sommelier attention and a curated selection from the full wine cellar.

Reservations sell out within minutes, and waiting lists run to five digits — which says everything about the singular place Alchemist has carved out in Copenhagen and in contemporary dining.

The great holistic total experience at Restaurant Alchemist is a critical yet life‑affirming relationship to the way we interact with food and food production. When an experience is so present, we can endure meeting it multiple times without feeling that anything repeats itself, even though the composition of the roughly 50 impressions we receive is not all renewed. It actually doesn’t leave a trace, otherwise we would not be able to appropriate everything we encounter.

Getting there: Alchemist is located in Refshaleøen, a relatively remote part of Copenhagen known for its industrial buildings and a famous former shipyard. You have to go to the very end of the stretch before you get to the two-tonne-heavy bronze doors with decorations reminiscent of Narnia or Middle-Earth, which lead you into the mystical world of Alchemist. Wait for a few moments and they automatically swing open. Let the show begin! What should I expect?Be prepared for a journey unlike any meal you’ve had before. There are no courses, only ‘impressions’ – 50 of them, actually – divided into several ‘acts’ that takes guests through different locations, types of art and extraordinary craftsmanship over a seven-hour, multi-sensory odyssey. It’s the realisation of head chef and mastermind Rasmus Munk’s dream of a holistic and meaningful dining experience. Tell me more: You will be dining under a dome-shaped roof with various graphic sceneries that change throughout the dinner, but the prime reason it all works is because Alchemist’s cuisine is rooted in a strong foundation of classic techniques, modern research and Chef Munk’s obsessive search for the best ingredients. Expect ‘Space Bread’ canapés topped with caviar, the best seafood and pigeon aged in beeswax, just to mention a few delicacies – always presented in creative ways that will impress, as well as bring out your inner child. Designed to challenge: No guests are forced to attend lectures from staff during a dinner at Alchemist, but if you’re curious to dig deeper, there’s plenty to be enthralled and educated by. How about a freeze-dried butterfly to bring as a sustainable source of protein? Or some ‘Food for Thought’ where guests must scoop the ‘brains’ (cherry meringue filled with a lamb’s brain mousse) from a realistic mould of a human head.
