Frederikshøj occupies a rare position in Scandinavian fine dining — one that reaches well beyond Aarhus or Jutland. The White Guide, which awarded the restaurant its Global Masters distinction for 2026, describes it plainly as a "gastronomic bastion," noting that its influence is "significantly broader" than its geography might suggest. That kind of recognition is not given lightly, and a visit to Frederikshøj makes clear why.

Earlier in 2025, the restaurant closed temporarily for a full renovation — everything inside and out was rethought, rebuilt, and refreshed. The result, in the words of the White Guide, is a kitchen and dining room that are "sharper and more inviting than ever before." Team Frederikshøj welcomed guests back from April 2025, reopening what is already one of Denmark's most celebrated tables.

Wassim's Kitchen

At the heart of Frederikshøj is Wassim, whose name the White Guide uses as shorthand for the restaurant's creative identity — his "culinary playground," as they put it. The menu the kitchen calls Our Favorites reads as a confident statement of that identity: Danish lobster with white asparagus and crispy sweetbread of veal, razor clams with truffles and Jerusalem artichokes, pigeon with green pepper and carrots, and a dessert of rhubarb and chocolate in different textures with lemon verbena. Seasonal Danish produce — new potatoes with morels, mussels with Danish peas and smoked butter — sits alongside more international accents like kingfish with radishes and celery, or tuna with salted cucumber and yuzu.

The single tasting menu is priced at DKK 2,600, with an optional caviar supplement. Four wine pairing tiers are offered, ranging from DKK 2,000 for a thoughtfully assembled classical selection to DKK 10,000 for a list that includes a 2008 Dom Pérignon P2, a 2007 Bollinger R.D. in magnum, and a 2001 Château Palmer. The restaurant even bottles its own cuvée — a 2022 Meursault 1er Cru Genevrières under the Frederikshøj label via Hospice de Beaune — a detail that speaks to the seriousness with which wine is treated here.

The Experience

Frederikshøj opens Thursday through Saturday from 17:30, making each service an occasion rather than a routine. The fine dining format is supported by full table service, wine pairing, private dining rooms for parties, and facilities that include parking and wheelchair access. It is, in every sense, a complete destination — one that has earned its standing at the top of Danish gastronomy and continues, after its reinvention, to set the standard.
