When Wild Blue Restaurant + Bar opened in August 2022, it arrived with immediate force. Vancouver Magazine called it "The Most Important Whistler Restaurant Opening in a Decade," and Air Canada enRoute ranked it #2 Best New Restaurant in Canada. Those were opening-year credentials. What has followed is a sustained streak of recognition that few mountain-town restaurants anywhere can match — including a place on North America's 50 Best Restaurants 2026 at No. 47, and a Wine Spectator Best of Award of Excellence for its cellar program.

The People Behind It

Wild Blue is built around a founding partnership that carries serious weight. Restaurant Director Neil Henderson and chef-partner Alex Chen — celebrated Iron Chef and Vancouver Magazine's Chef of the Year — set the vision for what Pacific Northwest cuisine could look like at the fine-dining level in a ski resort context. Executive Chef Derek Bendig executes that vision daily, bringing a classic French and European culinary foundation to a menu grounded in sustainable seafood and locally sourced ingredients. In October 2024, Henderson and Chen were both inducted into the BC Restaurant Hall of Fame, recognition of careers that extend well beyond a single address.

The kitchen's commitment to Pacific Northwest cuisine means the menu follows the region's seasons and its coastline. Sustainable seafood is a throughline; local sourcing shapes what appears on the plate. The dining format shifts through the week — a prix fixe runs Sunday through Thursday, while Friday and Saturday evenings open into à la carte dining. An Intimate Wine Dinner Series and a Long Table Dinner Series round out the calendar for guests looking for something beyond the standard reservation.
