The story
"Oso" means "bear" in Spanish — a quiet nod to Whistler's wildlife — and it sets the tone for what Bar Oso is: a Spanish-inflected bar and dining room that feels genuinely rooted in its mountain surroundings without making a fuss about it. Situated on Whistler Square, it sits alongside sister restaurants Araxi, Il Caminetto, and Provisions as part of the Toptable Group's presence in the village, which gives it both a serious culinary pedigree and a convivial, unhurried character of its own.
The menu is built around the rhythms of Spanish eating — small plates, shared boards, and a few more substantial dishes that reward a longer table. Tapas range from chilled cucumber gazpacho and gambas al ajillo (prawns, garlic, chili, olive oil) to octopus "Jorge" style with confit potatoes and paprika, and a slow-cooked bone-in beef short rib with Pemberton carrots and red wine jus. The last detail matters: local BC producers appear throughout, grounding the Spanish cuisine in the Pacific Northwest without forcing the connection.
Classic pintxos — iberico with manchego and tomato, gilda with anchovy and piparras, tortilla de patatas — sit alongside a serious charcuterie selection that includes 'Cinco Jotas' acorn-fed 100% iberico ham and a house-made fresh board of duck liver parfait, pheasant pâté, and rabbit rillette. Montaditos on artisan bread cover ground from brandada de bacalao to sobrasada with local fireweed honey.
The drinks program is a destination in its own right. Wine Spectator recognised Bar Oso with its Award of Excellence in 2024, a reflection of a list that leans heavily into Spanish regions — Txakolina, Rioja, Ribera del Duero, Navarra — while making room for BC bottles from the Okanagan and Vancouver Island. Sangria comes in red and white. The gin and tonic selection spans seven expressions, from a BC Sheringham Seaside to a Japanese Suntory Roku. House cocktails include the Oso Sour (bacon-infused rye, green chartreuse, maple, egg white) and the Firecracker Margarita, made with bird's eye chili and basil-infused tequila.
Bar Oso opens daily at 4:30pm. Reservations are available for the first seating; after that, it's first-come, first-served — a format that suits the bar's easy, drop-in spirit while still rewarding those who plan ahead.
