The kitchen's philosophy is direct: modern Italian cuisine built from scratch, leaning on locally sourced ingredients wherever possible. Operation Director Caleb Quinton is a Vancouver native whose hospitality career began at thirteen, cooking at Umbertino's. His background — rooted in both kitchen craft and large-scale operations — shapes the consistency guests find across every service.
