The story
At Aiana Restaurant Collective on O'Connor Street, the premise is precise and genuinely compelling: Canadian ingredients, interpreted through a multicultural lens. Seasonal produce, regional seafood, responsibly raised meats, and wild ingredients form the foundation of every plate. Classical technique provides the structure; memory, migration, and imagination bring the depth. The result is Canadian cuisine that feels both rooted and expansive — local in origin, wide open in spirit.
Chef Raghav Chaudhary trained at The Culinary Institute of America before refining his craft in Michelin-starred kitchens. At Aiana, that discipline is in service of something personal: a conviction that Canadian ingredients can carry many cultural stories at once. In 2024, he represented Ottawa at the Canadian Culinary Championship — a milestone that continues to shape the restaurant's evolving identity. His food is described, in his own words, as thoughtful, generous, and rooted in a genuine desire to make people feel welcome. In October 2025, Chaudhary released his first cookbook, Gather, Savor, Share, built around staff-meal recipes and the idea that the best food is food shared with the people around you.
Guests can choose between an à la carte menu and a chef's tasting menu — both grounded in Canadian terroir and animated by multicultural perspective. The wine program is built to match: over 300 selections sourced from top producers worldwide, chosen to bring clarity, texture, and conversation to the table rather than simply to impress. That commitment to wine and service has earned Aiana the Wine Spectator Best of Award of Excellence five consecutive times — a remarkable streak that speaks to the consistency and seriousness of the program.
Aiana also accommodates private parties and catering, and a dedicated social hour runs Tuesday through Friday — a low-key invitation to explore the wine list before dinner. The space can even be toured in 3D online, a small but telling detail about how the team thinks about hospitality: considered, accessible, and a step ahead.
