The story

Le Temps des Cerises: Traditional Namur Cuisine

The chef and the kitchen

Since establishing its presence in Namur, Le Temps des Cerises has built a steady reputation through regional cooking that honors seasonal produce. Dominique Renson leads the kitchen after transitioning from forestry work thirty-five years ago. His approach treats local farmers as primary partners, rotating the menu every two months to match harvest cycles. A Gault&Millau score of twelve reflects how consistently the team translates forest-floor ingredients into familiar plates.

Standout dishes

The kitchen anchors its offerings around hearty provincial staples prepared with precise technique. Diners regularly order the pork jowl simmered in a Sambre and Meuse reduction, while the garlic herb snails follow strict local preparation methods. Gratinated ham joints arrive crisp at the edges, and the Namur cassoulet incorporates peket spirits for depth. These selections demonstrate how traditional Belgian cuisine remains grounded in measurable flavor rather than fleeting trends.

Room and atmosphere

White checkered tablecloths cover wooden surfaces throughout the dining room, creating a straightforward backdrop for decades of regular visitors. Guests frequently notice autographs left by performers and musicians on the plaster walls over nearly fifty years. The midday service runs a three course lunch near twenty nine euros, drawing locals who appreciate the predictable rhythm. House made citrus and spice aperitifs pair easily with carefully sourced regional wine lists.

The storefront is red, the tablecloths are gingham, the produce is often locally sourced, the walls are scrawled with the autographs of stars who’ve popped in for a bite while passing through Namur, and the ambiance ebbs and flows depending on boss Dominique Renson’s mood. For the past 36 years, he’s been giving traditional Lyonnaise bouchons a run for their money, with dishes like: Beuzet Gros Gris snails served Namur-style braised in beer or veal sweetbreads with morel mushrooms, two wonderfully sauce-y starters topped with a pastry croustade that sure sent us into a tizzy; followed by a 300-gram Irish rib-eye steak served with the local specialty sauce Sambre et Meuse (a creamy tarragon and tomato sauce), a side of fries cooked in beef fat, plus homemade mayo; or – unless you prefer pig’s snout, the house specialty, if that floats your boat – humongous knuckle of ham, so perfectly cooked it could bring a tear to your eye, served with a Bister mustard sauce as an epitaph; and a baba au rhum with Malaga raisin ice cream that promised to be “epic” – but despite our best efforts, our bellies were full. Lovers of vegetables and moderate portions, walk on by. // Idoine Gérard
