The story
Gowings Bar and Grill on Market Street puts it plainly: "rooted in history but made for now." The concept fuses the drama of a classic New York steakhouse with the warmth of Little Italy — flames leap in the open kitchen, martinis arrive tableside on a trolley, and handmade pastas consistently steal the show. It is the kind of room where old-school technique and modern expression share the same table, and the energy climbs steadily from the moment you walk up the stairs.
The à la carte menu reads with confidence. Starters include Mooloolaba spanner crab and Oscietra caviar with crème fraîche and crostini, alongside Coffin Bay octopus grilled to order and set over tomato-nduja sugo with house caponata. Handmade pastas — among them a braised rabbit pappardelle — anchor the middle of the menu, while mains push toward the serious end: Robbins Island MB9+ Wagyu sirloin sits at the top of the steakhouse register. The three-cheese risotto, slow-stirred and finished with 10-year-aged balsamic, shows the Italian contemporary side of the kitchen at its most considered.
Lunch brings a lighter edit — the Midday Edit has featured a Milanese pork cotoletta with burnt sage, caper berry, parmesan and lemon — while the afternoon Sips N' Snacks session runs Monday to Saturday from 3pm, walk-in only, with caviar bites and sharp cocktail pours at the bar.
Wine Spectator awarded Gowings its Best of Award of Excellence in 2024, recognition that reflects a list built with genuine range and intention. Italian labels feature prominently — fitting for a room where the cuisine leans so deliberately toward that tradition — but the cellar clearly extends well beyond.
Beyond the regular service, Gowings runs limited-run chef collaboration dinners under the banner Dal Mare alla Città ("from the sea to the city"), bringing together some of Sydney's most respected Italian-focused chefs for one-night-only menus. These events have sold out weeks in advance, which says something about the appetite Sydney has for serious Italian cooking done with personality.
The bar stays open late, the room has a live energy that suits both a long dinner and a quick drink, and the kitchen draws from Australian produce — Tasmanian abalone, Bermagui yellowfin tuna, Coffin Bay shellfish — while keeping the Italian contemporary spirit at the centre of everything it does.
