A Regional Destination Built on Seasonal American Cuisine

Chimney Park Restaurant & Bar has been a fixture of Northern Colorado's fine dining scene since chef and owner Jason Shaeffer opened its doors in 2007. Set inside a historic building in downtown Windsor originally constructed in 1895, the restaurant has grown from a local favorite into a regional and national dining destination — one that draws guests from Fort Collins, Loveland, Greeley, and well beyond.

The kitchen's philosophy is straightforward and uncompromising: source local, seasonal, and organic products from Colorado and the surrounding region, then let those ingredients drive the menu. The result is a style of American cuisine that moves with the calendar rather than against it, with chef-driven tasting menus that reflect what's genuinely at its best rather than what's merely available.

Jason Shaeffer and the Case for Considered Hospitality

Shaeffer's approach merges the refined elements of fine dining with a feeling of accessibility — a balance that's harder to achieve than it sounds. The room suits a quiet dinner for two as naturally as it does a private event for a larger group. Two dining rooms accommodate up to 40 guests in the main space and 12 in the more intimate "Nook," with the full restaurant available for parties of up to 65.

The wine program has earned consistent recognition from Wine Spectator, including the Best of Award of Excellence — a distinction that reflects both the depth and breadth of a list featuring more than 450 selections spanning multiple wine-growing regions and significant vertical depth from top producers. That level of curation doesn't happen by accident; it's the product of the same attention to detail that shapes every other aspect of the experience.

Rebuilding, Expanding, and Looking Ahead

Following a kitchen fire, Chimney Park is currently closed and working toward a reopening estimated for Summer 2026. The restoration is being treated as an opportunity rather than just a repair: the historic building is being carefully rebuilt, the back patio is being transformed into a new "Lake Dining Room," the kitchen is being extended, and the bar area is being expanded and redesigned with an elevated menu and the addition of lunch service.

The 2026 mission, in Shaeffer's own words: "Rebuilt and renewed, Chimney Park will continue to deliver chef-driven tasting menus, hospitality, and wine service with the precision we're known for, while evolving our bar with a refreshed design, elevated offerings, and the addition of lunch."

For a restaurant that has spent nearly two decades defining what seasonal American cuisine can look like in Colorado, the return is worth the wait.
