The kitchen works with ingredients like mango powder, ancho chile dust, and iris water, building sauces that range from cashew-garlic-pomegranate seed to apricot cream and soy-tomato glaze. These aren't decorative flourishes — they're the foundation of a menu that treats Indian cooking as a living tradition rather than a fixed template.
