La Goulue began in New York City in 1972, founded by restaurateur Jean Denoyer, and spent more than a quarter century earning its place as a treasured institution. In 2020, the restaurant extended its reach to Palm Beach, Florida, bringing that same bistro chic sensibility to South County Road — and quickly earning a reputation as one of the most talked-about tables in town. Publications from Town & Country to Haute Living took notice, with one calling it "perfectly Parisian" and another noting that "the Belle Époque era is alive and well."

The Kitchen Behind the Reputation

At the heart of La Goulue Palm Beach is Executive Chef Gwen Le Pape, described by the restaurant as a versatile culinary talent who presides over the kitchen with both precision and passion. The culinary philosophy centers on seasonal, local ingredients shaped into classic French dishes with a modern sensibility. The result is a menu that reads like a love letter to France — Soupe à l'Oignon Gratinée with toasted Gruyère, Les Escargots de Bourgogne au Beurre d'Ail, a Terrine de Foie Gras Maison with port fig chutney, and a Tartare de Boeuf prepared with prime tenderloin. The signature dish, however, is Le Soufflé au Fromage — a cheese soufflé with Gruyère, Parmesan, and white truffle oil that has been on the menu since the restaurant's founding in 1972 and is described as the award-winning dish that defines the house.

On Wednesday and Sunday evenings, a 12 oz. prime rib is seasoned, carved tableside, and plated with sautéed haricots verts and cherry tomatoes — a theatrical touch that underscores the restaurant's commitment to the full dining experience.

Wine, Atmosphere, and the Full Experience

The dining room wraps guests in chic French decor, and the wine program has earned the Wine Spectator Award of Excellence for 2025 — recognition that reflects the depth of a list built around boutique French vineyards. Sommelier Xavier To Van Trang collaborates with Chef Gwen on regular Sunday wine tastings, pairing selections from around the world with food in what the restaurant calls "a fun and educational afternoon."
