The Mind Behind the Menu

Chef Daniel Boulud was born in Lyon, France, and has been based in New York since 1982. His flagship DANIEL on the Upper East Side is Michelin-starred, and his restaurants now span from Montreal to Hong Kong. What grounds his cooking everywhere, including Palm Beach, is an unwavering respect for seasonal ingredients and classical French technique. At The Brazilian Court, that philosophy meets local seafood, Florida produce, and a distinctly warm, sun-drenched setting.

Day-to-day, the kitchen is led by Executive Chef Christopher Zabita, with Pastry Chef Rosana Quintero and Head Sommelier David Sauer completing a tight, experienced team. The menu they produce is described as a French-American blend — rooted in Lyon, shaped by what's growing and swimming nearby.

The kitchen rotates weekly specials that give the menu rhythm: escargots on Tuesdays, Branzino for Two on Fridays, Beef Wellington on Saturdays. Midweek, Wednesday evenings bring 50% off the entire wine list — a rare and generous gesture. A La Tête d'Or-inspired prix fixe runs at lunch for $58 and dinner for $95, offering a structured taste of Lyon in a Palm Beach setting.

From Morning to Afternoon Tea

The French-American scope extends across the full day. Breakfast runs daily from 7 AM, with everything from lemon ricotta pancakes and CB avocado toast to a proper All American plate with stoneground grits. In the afternoon, a formal tea service — Palais des Thés selections, freshly baked scones with Devonshire cream, and pastries like a pistachio Amarena macaron or peach and cherry blossom mousse — brings an unexpected and refined pause to the Palm Beach afternoon.
