The name says it all. Cobalt sits directly on Ocean Drive in Vero Beach, steps from the sand, with sweeping views of the Atlantic that frame every meal from brunch through dinner. Part of the Kimpton Vero Beach Hotel & Spa, the restaurant operates as the property's signature dining concept — a contemporary steakhouse where the ocean is as much a presence as anything on the plate.

Chef Matt Lange leads the kitchen with a résumé that moves from Michelin-starred NoMi Kitchen inside Park Hyatt Chicago to executive positions at Loews Chicago Hotel, with earlier stints at Rosen Shingle Creek, the Omni Orlando Hotel, and even a season as sous chef aboard Silversea Cruises in the Baltic Sea. That range shows in his approach: seasonal, refined American cooking that draws on the natural abundance of the Treasure Coast, sourcing from regional purveyors who supply the kitchen daily. "I believe developing the culture is an extremely important element in the kitchen," Lange has said. "It is what keeps the team excited, motivated, and generating quality dishes."

A Wine Program Worth the Trip Alone

Cobalt has earned the Wine Spectator Best of Award of Excellence — recognition that reflects sommelier Erin O'Keefe's work building a list designed to transport guests as surely as the ocean breeze does. O'Keefe, who trained at a Champagne vineyard in Charly-sur-Marne, France, and holds WSET certifications, describes her goal as a program "welcoming to all" — from a rosé that evokes Provence to a Brunello that conjures the Tuscan countryside. The award-winning wine selection pairs naturally with a seafood and steakhouse menu that changes with the seasons.

Multiple Scenes, One Address

The restaurant offers several distinct settings: a beachfront dining room, an outdoor patio, a lounge, and access to Heaton's poolside grill. Private dining is handled in two dedicated rooms — Seascape, which accommodates 15 to 40 guests with ocean views and high ceilings, and Shoreline, which hosts 20 to 80 guests with a dance floor and oceanfront terrace. Live music, expert-led wine dinners, and a daily happy hour keep the calendar full beyond regular service.

Cobalt also takes its place on the beach seriously in a more literal sense: the restaurant participates in the Indian River County Sea Turtle Conservation Plan, turning off outdoor lights during critical periods of the sea turtles' mating cycle, and donates oyster shells to the St. Lucie Oyster Reef Restoration Program.

Dress code is casual resort wear — shorts and sandals are welcome at dinner, bathing suits are not.
