At the stove is Carlos Ochoa, Chef de Cuisine, whose story is as grounded as the food he produces. Born in Cananea, Sonora, Mexico, he grew up harvesting produce from his grandmother's garden and learning butchery from his uncles. His first kitchen job at a local resort confirmed a vocation, and after relocating to the United States he earned an apprenticeship at an Italian restaurant in Chicago before staging at Per Se and Alinea. That classical rigor now meets the ingredients of the Sonoran Desert, and Ochoa channels both into dishes that reflect this specific region. His words say it plainly: the food is humble but well-made, and that quality adds something close to magic to the experience.
High-quality steaks served with a "rainbow" of house-made sauces are the centerpiece, but the menu reaches further — salads, tapas, fresh seafood, and seasonal dishes such as Australian lamb and roasted chicken keep the offering genuinely broad. Every Wednesday, a slow-roasted prime rib night gives regulars a reason to return mid-week.
The wine program is exceptional by any measure. The cellar holds more than one thousand selections, including bottles from Arizona's finest vintners, and the list earned Wine Spectator's Award of Excellence in 2021. For those who prefer cocktails, the adjoining PY Bar — an intimate space with its own atmosphere — is staffed by master mixologists whose classic and signature drinks Forbes describes as "truly special."
A private dining room with wine-cellar décor is available for special events, making PY one of the more versatile fine dining options in southern Arizona.
