The story
Founded in 2012 at 94 Genesee Street in Baggs Square West, The Tailor and the Cook has spent more than a decade setting the standard for thoughtful American cuisine in Central New York. The restaurant takes its name from the UTK Tailoring Company, which occupied that original address from 1910 through the 1940s — a quiet nod to the city's layered commercial history. Today, the restaurant has moved to 311 Main Street, a historic building that once housed Utica's beloved Children's Museum, and the expanded space has only sharpened its ambitions.
The move was driven by the same four people who started it all: founders Tim and Melissa Hardiman and Chris and Tracey Talgo. Their mission has never wavered — great local food and drink, sustainable business practices, and a genuine investment in the community around them.
The philosophy here is straightforward and uncompromising: source from farmers and producers you trust, let the seasons guide the menu, and give guests a clear line of sight from plate to field. Menus change frequently based on what's fresh and available across New York State, which means the American cuisine served at The Tailor and the Cook reflects the region's agricultural rhythms rather than a static kitchen formula.
The bar program carries the same regional conviction. The restaurant's New York State wine program earned a Wine Spectator Award of Excellence — recognition that reflects the care and curation behind a list built to showcase what the state's vineyards produce at their best.
The new Main Street location is considerably larger than its predecessor, with an expansive bar area designed for casual dining alongside the main dining room. Small plates, the NYS Cheese Board, the Butcher's Board, handcrafted cocktails, and locally sourced comfort food anchor the bar menu. The dining room, renovated with reclaimed, recycled, and locally produced materials wherever possible, offers more than 100 seats — walk-ins welcome.
A private room accommodates groups of up to 20, and Sunday brunch rounds out a seven-day schedule that runs from mid-afternoon dinners on weekdays to a full late-night Saturday service.
The Tailor and the Cook is also deliberate about its environmental footprint: by sourcing locally and choosing to renovate an existing historic structure rather than build new, the restaurant has embedded sustainability into its bones, not just its talking points. The result is an American dining experience that feels genuinely connected to Utica — its history, its farms, and its ongoing revival.
