Truluck's at Hughes Landing brings a polished, full-commitment approach to fine seafood dining to The Woodlands, Texas. The guiding principle is straightforward: superior ingredients, precise execution, classic presentation—and an unwavering refusal to compromise on sourcing. That philosophy earned the restaurant a 2025 Wine Spectator Award of Excellence, recognition that reflects the seriousness with which Beverage Director Dave Mattern and his team have built the wine program.

The Signature: Florida Stone Crab

The centerpiece of the Truluck's experience is the Florida Stone Crab—sustainably harvested from the Gulf and Atlantic coasts, with claws traveling from the trapper's haul to the table in less than 24 hours. Not a single claw is frozen. Across the group, Truluck's serves over 300,000 fresh claws each season (October 15 through May 1), a scale that demands tight relationships with Florida crabbers and strict adherence to harvesting regulations that protect the species' long-term viability. It's a supply chain built on genuine respect for the marine ecosystem, not just a marketing talking point.

Beyond the crab, the kitchen turns out prime hand-cut steaks, Ōra King Salmon—responsibly raised and available seasonally—Mediterranean Branzino, and miso seabass, a dish that Corporate Executive Chef Thomas Dritsas's team considers a test of real skill. "The complexity of the dish itself is a great dish not only from the guest standpoint but also the skill set that is required to make it perfect," says Florida Regional Chef Partner Odel Arencibia.

A Kitchen Built on People

The culinary leadership behind the Woodlands location is part of a broader structure that Corporate Executive Chef Thomas Dritsas and Director of Culinary Operations Chef Samir Canaan built deliberately over the past several years. Chef Partner Manny Vera, who has been with the Truluck's group since 1998, embodies the culture: relentless standards, immaculate kitchens, and a belief that the best food starts with the best people. "Truluck's took this fool from the hood, cared for me, taught me and believed in me," Vera has said. "My mindset is on giving back every day."

The Bar and the Bottle

The Wine Spectator recognition is no accident. The list leans into Mediterranean pairings—Italian whites like Vermentino, Verdicchio, and Timorasso chosen specifically to complement seafood—alongside Burgundy-style expressions and robust Amarone. Happy Hour runs nightly in the bar, with cocktails, wines by the glass, and freshly shucked oysters all at half price. The Martini Experience—four cocktails including the petite Tiny Tini—is available every evening, with house-selected single-barrel spirits like the exclusive Truluck's Reserve Elijah Craig bourbon (aged over nine years, 132.2 proof) anchoring the cocktail menu.

Private Dining and Events

The Woodlands location offers private and group dining spaces suited to rehearsal dinners, corporate gatherings, birthdays, and board meetings. The in-house event team, led locally by Amber Scheer (CPCE), handles logistics from floor plan to menu design, with the stated goal of ensuring the host never has to lift a finger on the day itself.
