The story
Lilac is the signature fine-dining restaurant inside The Tampa EDITION, and the vision belongs entirely to Chef John Fraser. Born in Los Angeles and shaped by years building a celebrated restaurant group in New York City, Fraser brings a deeply personal point of view to Tampa: modern Mediterranean cuisine drawn from his Greek heritage and his admiration for Turkish and French culinary traditions. The result is a restaurant that feels both globally considered and unmistakably connected to its coastal Florida setting.
Fraser's track record speaks for itself—eight consecutive years of Michelin recognition at Dovetail, a Michelin star at NIX, three New York Times stars, and a string of critically acclaimed concepts from the West Village to West Hollywood. Lilac, which opened as part of the Tampa EDITION in 2022, has continued that trajectory, earning three Michelin Stars and a Forbes Travel Guide Four-Star rating, with inspectors singling out its "naturally bright flavors" and the kitchen's graceful handling of dietary preferences.
The dining room occupies the main floor of the hotel, and its design is deliberate: walnut flooring, globe pendant lighting, and an eight-seat chef's counter in sandblasted walnut by designer Christian Liaigre, positioned directly across from an open kitchen. The show kitchen is central to the experience—guests watch preparations unfold, and several dishes arrive tableside, including the signature champagne cart, which delivers bubbly cocktails mixed and poured at the table in their own signature flutes.
Guests choose between an eight-course chef-curated tasting menu and a more flexible à la carte format—a structure that reflects Lilac's philosophy of refinement without rigidity. A house sommelier guides wine pairings through each course.
The menu changes with the seasons and leans on locally sourced produce and Gulf Coast seafood. Standout dishes documented by Forbes inspectors include herbed pasta with a soft egg, sherry-braised chanterelle mushrooms or shaved black truffles, and locally caught grouper or red snapper prepared Portuguese-style in a tableside cataplana. The about-us pages add spice-crusted tuna with chickpea-ramp hummus, pork belly with Spanish octopus and nduja sausage, and scamp grouper à la plancha with eggplant caviar to the picture—each plate pairing Mediterranean technique with the character of Tampa Bay's artisans and waters.
The kitchen accommodates dietary restrictions with the same care applied to the main menu, producing substitutions that are, by all accounts, equally considered and flavorful.
Modern Mediterranean cuisine of this caliber is rare anywhere, and rarer still in Florida. At Lilac, the combination of a chef with Fraser's pedigree, a setting designed for immersive dining, and a sourcing philosophy anchored in local and seasonal ingredients places it in a category of its own on the Tampa dining scene.
