On the main floor of the JW Marriott Tampa Water Street, Driftlight Steakhouse occupies a four-story glass-wrapped space that feels open and airy without sacrificing warmth. Steps from the Tampa Riverwalk, Sparkman Wharf, and Amalie Arena, the restaurant draws both locals and hotel guests into what it calls "shared dining" — a philosophy that runs through every part of the experience, from the shareable starters to the grand seafood towers anchoring the dinner menu.

The Menu: Land, Sea, and Regional Roots

The kitchen describes its approach as chef-selected land and sea dishes driven by regional ingredients, and the dinner menu makes that concrete. Signature cuts range from an 8 oz Filet to a 32 oz Tomahawk Ribeye, with Japanese Wagyu and a 45-day dry-aged option for those who want to go further. The seafood side is equally serious: Bluefin Tuna Tataki with kabayaki sauce and mango salsa, Hokkaido U10 Scallops over parsnip puree with smoked bacon marmalade, and chilled towers stacked with East and West Coast oysters, lobster tail, and snow crab. The Black Truffle Wagyu Carpaccio — dijonnaise, grana padano, crispy capers — bridges both worlds neatly.

Starters lean into bold, cross-cultural combinations: Charred Pork Belly with kimchi jam and puffed rice chips, Korean Fried Chicken finished with wild American paddlefish caviar, a Key Lime Caesar built on local farm romaine. Sides like Shrimp Mac & Cheese with truffle white cheese sauce and Creamed Corn with bacon béchamel and chihuahua cheese signal that comfort and refinement are not mutually exclusive here.

Breakfast runs daily and covers everything from a Venezuelan Arepa and Smoked Salmon Bagel to Steak & Eggs with a 6 oz filet mignon — a reminder that this is a full-day steakhouse and seafood destination, not just a dinner stop.

Drinks and Recognition

The wine program earned Driftlight a Wine Spectator Award of Excellence in 2025, reflecting a collection that spans global regions and is designed to complement both the heavier cuts and the lighter seafood plates. Handcrafted cocktails offer what the restaurant calls "new interpretations of classic cocktails" — the tableside Old Fashioned cart that rolls through the dining room on special evenings is a good example of that sensibility in action.

Beyond the Dining Room

The adjacent Driftlight Lounge, open daily until midnight, serves a locally inspired menu in the same glass lobby and connects the steakhouse energy to the broader Water Street neighborhood. For something more unconventional, bespoke picnic basket experiences take seasonal fare outside — to the waterfront, aboard a private sail, or directly to a guestroom — with silver serviceware included.
