Bin6South on Sixth Street South operates on a scale that is almost deliberately countercultural: one live-edge communal table seating six, a six-seat bar overlooking an open kitchen, and a maximum of twelve guests at any one time. That constraint is the point. The room functions less like a restaurant and more, as one regular put it, like "going to a favorite family member's home for the holidays" — wine flowing, strangers becoming dinner companions, staff fielding questions from the kitchen side of the pass. The Wine Spectator Award of Excellence the restaurant earned in 2023 reflects exactly that kind of focused, personal attention to what ends up in the glass.
The team's stated motto is "nothing is off the table." The world, they say, is their shopping cart — a broad sweep of seasonal proteins, vegetables, herbs, spices, and what they call "exotics" sourced without geographic restriction. The result is a rotating seasonal menu that resists easy categorization. Executive Chef Joe Nelson leads the kitchen, and the current dinner menu reads as a study in technique and fermentation: koji-rubbed confit duck leg with blueberry gastrique and fermented garlic hummus; rainbow trout with sauce vierge, fermented white asparagus, and beetroot foam; a rabbit saddle with rillette and fermented giardiniera alongside rutabaga Robuchon. Fresh pasta shows up as raviole filled with goat cheese, tarragon, and sage, finished with toasted hazelnut and bordelaise. The Bin Board — an assortment of rotating hors d'oeuvres with crostini — anchors the menu as a communal starting point, and every dish carries a suggested wine pairing printed right alongside it.
The bottle shop dimension of Bin6South means the wine program extends well beyond the dining room. Tuesday and Wednesday evenings center on guided wine tastings open to novices and experienced drinkers alike. Thursday through Saturday, the full dinner menu runs alongside a selection of wine, sake, and beer. The Floridian seasonal cooking philosophy carries into the events calendar as well: themed chef's tasting dinners — six courses, wine pairings included — are held periodically for small groups, and private buyouts accommodate parties up to twelve for business gatherings or social evenings.
A fresh garden marks the entrance on 6th Street South. Inside, the live-edge wood table and bar stools overlooking the kitchen set the tone — warm, tactile, unhurried. Guests sharing the communal table are the norm rather than the exception, and the atmosphere that results is genuinely convivial.
