A Modern Steakhouse with Serious Credentials

The Butcher's Table on Westlake Avenue is Seattle's answer to the modern steakhouse — a place where fine dining and a lively bar coexist without apology. The restaurant is built around Mishima Reserve American Wagyu beef, one of the most prized domestic beef programs in the country, and that commitment runs all the way through to an on-site Butcher Shop stocked with Wagyu cuts, house-smoked meats, and other menu favorites for guests to take home.

Wine Spectator recognized the restaurant with its Best of Award of Excellence, a distinction that reflects the depth and curation of a wine list shaped by people who take the pairing side of a steakhouse dinner as seriously as the beef itself.

The Team Behind the Kitchen

Executive Chef Morgan Mueller grew up in the Santa Cruz Mountains, where foraging and gardening were part of daily life. He spent five years as Executive Chef at San Francisco's Jardinière — a James Beard nominee — before joining The Butcher's Table in 2019. His dishes are recognized for full flavors, rich colors, and carefully composed ingredients, a sensibility that elevates the steakhouse format without overcomplicating it.

Alongside Mueller, Executive Sous Chef James Mueller brings more than two decades of experience, including time in Michelin-starred kitchens and work with James Beard Award-winning chefs across Las Vegas, San Francisco, and Chicago. His appreciation for Washington's local farm produce shapes the seasonal side of the menu.

Wine, Service, and the Room

General Manager David Chou started his career washing dishes at his parents' restaurant in Columbia, Missouri at age ten. He is now a certified sommelier whose résumé includes stints at Café Juanita, Sawyer, and Bateau in Seattle. Wine Director and Assistant General Manager Kristen Young brings further depth — she earned Sommelier of the Year recognition from the Washington State Wine Commission and won the Cochon 555 Food & Wine Pairing Challenge, credentials that make the wine program here more than a list on a page.

Beyond the Dining Room

The Butcher's Table is part of the Sugar Mountain family of businesses, which includes Beecher's Handmade Cheese and Mishima Reserve among its affiliates — a network that keeps sourcing close and quality traceable. The Gold Dust Room provides a dedicated private event space, while the broader restaurant accommodates corporate dinners, social gatherings, and charitable events. The Butcher Shop operates on its own hours, making it possible to bring the steakhouse experience home even on a weeknight.
