What's on the Plate

The menu is rooted in Pacific Northwestern seafood, with the region's prized ingredients front and center. A Seafood Tower arrives stacked with Maine lobster, king crab legs, chilled shrimp, tuna poke, oysters, and clams — a statement piece for the table. From the "Dock to Dine" section, guests choose from Alaskan halibut, British Columbia salmon, king salmon, ahi tuna, or Chilean sea bass, each prepared to order. More composed plates include Sake Marinated Black Cod with shrimp cake, shiitake mushrooms, and coconut lemongrass curry; Seared Chilean Seabass over lobster risotto with roasted tomato beurre blanc; and Dungeness Crab + Shrimp Bucatini finished with botarga and clam juice. For those who prefer land to sea, herb-crusted slow-roasted prime rib and a bone-in New York strip hold their own alongside the Palisade Steak & Lobster combination.

Starters lean into the Pacific Northwest larder as well — Dungeness Crab Dip with Parmesan and capers on a Macrina potato baguette, East Meets West Crab Cake pairing a Dungeness cake with softshell crab, and briny oysters on the half shell served with mignonette and cocktail sauce.
