A Family Recipe, Four Generations in the Making

Solevo Kitchen + Social has occupied the corner of Phila and Henry in downtown Saratoga Springs since 2018, and the story behind it runs considerably deeper than that. The restaurant is owned and operated by fourth-generation Italian-American Chef Ronald Solevo, who grew up learning to cook at the apron strings of his parents and grandparents in Southern Connecticut. After years sharpening his skills in Manhattan, Brooklyn, and abroad, Chef Ronnie chose Saratoga Springs as the place to put down roots — a city the Solevo family had visited and loved for decades, and where they long dreamed of bringing their cuisine.

The result is less a restaurant concept than a family archive made edible. Solevo is an homage to recipes passed down through generations of Southern Italian chefs and restaurant owners, translated for a contemporary table without losing their soul.

Old-School Italian, Cooked from Scratch

The kitchen practices strict scratch cooking, leaning on the abundance of local and organic ingredients available in upstate New York. The menu shifts with the seasons and draws from three overlapping traditions: peasant-style family recipes, authentic regional Italian cuisine, and Chef Ronnie's own contemporary takes on Italian-American red sauce classics. Dishes glimpsed on social media — lobster pasta, fried whole-milk fior di latte mozzarella, mussels, affogato sundaes — reflect a kitchen that takes both comfort and craft seriously.

The bar program is equally considered. Classic cocktails draw inspiration from Italian mixology, and the wine list is built around food-friendly pairings. That list earned Solevo a Wine Spectator Award of Excellence in 2023, a recognition that speaks to both its depth and its curation. The restaurant has also been named among the Times Union's Essential Capital Region Restaurants.

Aperitivo, Racing Season, and Everything Between

The rhythm of the week at Solevo has its own character. Weekday aperitivo runs Monday through Friday from 4 to 6 pm, with a dedicated aperitivo menu at the bar — a proper Italian-style happy hour rather than a discounted afterthought. Wednesday brings half off the entire bottle list, making it a natural night to explore the wine program more freely.

Saratoga Springs has a personality tied to its racing heritage, and Solevo leans into that energy during the summer season while remaining a year-round destination. Private events, full takeout and delivery, and a catering operation extend the Italian cooking beyond the dining room for those who want a piece of it at home.
