The restaurant's commitment to responsible sourcing sets the tone for everything. Situated at the center of New York's Market Garden region, Salt & Char works exclusively with producers who meet strict standards for ethical sourcing, humane treatment, and chemical-free practices. The result is a meat program built around aged cuts, Black Angus, and American Wagyu — ingredients whose origin is known and whose quality is guaranteed.

What's on the Table

The dinner menu reads as a confident, wide-ranging expression of the Modern American steakhouse format. Signature cuts run from a 7oz Filet Mignon to an 18oz Dry-Aged Kansas City Strip, a 7oz Wagyu Top Cap, and a 4oz A5 Miyazaki Wagyu — the kind of selection that takes the format seriously. A "Carnivore Experience" offers a chef's selection of signature cuts for those who want to put the kitchen in charge.

Beyond the steaks, the menu moves with genuine range. The Broadway Tower — oysters, kombu-cured salmon, tuna tartare, crab, and shrimp cocktail — anchors the raw bar, while starters like Charred Octopus with white bean and chorizo, and Prime Beef Carpaccio with black garlic aioli and tobacco onions, signal a kitchen comfortable with technique. Main courses extend to Seared Scallops with lobster risotto, Sautéed Rabbit Saddle, and a Lemon Ricotta Ravioli that holds its own alongside the meat-heavy headliners. Desserts — a Berry Pavlova, Éclair Pistache, and Chocolate Hazelnut Praliné among them — are made in-house and handled with the same care as the rest of the meal.
