A Taste of Parma in Sarasota

La Violetta is owned and operated by Emilio and Rosaria, who brought their roots from Parma, Italy, to Sarasota's Swift Road. The room seats just over 50 guests, with white linen tablecloths, soft lighting, and a warm intimacy that makes it equally suited to a quiet weeknight dinner or a proper celebration. Through a window visible from the dining room, pasta is made by hand before service — a detail that sets the tone for everything that follows.

Gambero Rosso awarded La Violetta 2 Forks in 2025, a recognition that reflects the kitchen's commitment to technique and authenticity rather than spectacle.

Chef Emilio and the Kitchen

Chef Emilio leads the kitchen with a focus on the traditions of Northern Italy. Guests have noted his willingness to step out and share what's aging in the dry-age cabinet — including cuts rested 70 days or more — and to carve thin slices for curious diners on the spot. The cooking is done on a Japanese grill with oak and cherry wood, finished with whisky and red wine woodchips. Meats are aged a minimum of 28 days in-house.

What to Eat

The 100% homemade pasta section is the heart of the menu. Tortellini di Bologna — stuffed with braised short rib in a baby back rib ragout — draws repeat orders. The egg yolk ravioli (a frequent special) has earned its own devoted following, with the yolk cooked precisely and truffle and mushroom layered on top. Caramelle, candy-shaped ravioli filled with Prosciutto di Parma, Parmigiano, and black truffle sauce, represent the kitchen at its most refined.

Beyond pasta, the menu moves confidently through Northern Italian cuisine: veal ossobuco served with risotto, duck leg confit with orange risotto, rabbit alla cacciatora in white wine with olives and rosemary, and whole baked branzino with house-made garlic spaghetti. Starters like vitello tonnato, fried polenta with lardo and shaved black truffle, and seared Hudson Valley foie gras over bruschetta with pear-fig jam show a kitchen comfortable with both rustic and precise preparations.

The wine list draws from across Italian regions, and the house-made limoncello is offered as a complimentary touch that guests consistently mention.

Rosaria and Emilio run the room with the ease of people who genuinely want guests to feel at home. The restaurant encourages fare la scarpetta — the Italian habit of using bread to mop the last of the sauce from the plate — as a kind of philosophy: nothing on the table should go to waste because nothing should be left behind. That attitude, unpretentious and deeply Italian, is what makes La Violetta's northern Italian cuisine land as something more than dinner.
