The story

Crafted with passion, served with love

Rooted in Santa Fe's Storied Past

The Anasazi Restaurant sits in the heart of downtown Santa Fe, inside the Rosewood Inn of the Anasazi on Washington Avenue. The restaurant's identity is inseparable from the city around it — its Southwestern American cuisine draws on New Mexico's rich fusion of cultures, its larder shaped by farm-fresh produce that changes with the seasons. The dining room, the patio open from morning to sunset, and the intimate Wine Cellar together offer a range of settings, from casual weekday lunches to private gatherings over fine wine.

Chef Cristian Pontiggia

The kitchen is led by Cristian Pontiggia, a Lombardy native who came to Santa Fe after more than 25 years in the food and beverage industry, including stints at top restaurants across Europe. His trajectory since arriving in New Mexico has been notable: the American Culinary Federation named him Chef of the Year in both 2022 and 2023, and the New Mexico Restaurant Association followed with the same honor in 2023. That consistent recognition reflects a kitchen that takes its local context seriously while bringing rigorous classical technique to the table.

What's on the Plate

The menu spans all-day dining, and the Southwestern American influence runs through every service. Breakfast leans into regional character — Huevos Rancheros with black beans, queso fresco, and salsa ranchera; Anasazi Chilaquiles Rojos o Verdes with egg any style and avocado; and a Santa Fe Omelet with wild mushroom, mixed peppers, and queso asadero. Alongside these are more familiar morning anchors: a Tres Leches French Toast made with homemade brioche, toasted almonds, and vanilla crème, or a straightforward Smoked Salmon Bagel with avocado and pickled onion. Lunch and dinner continue the seasonal, locally sourced approach, with the menu explicitly subject to change based on product availability — a quiet signal that what arrives on the plate is genuinely tied to what's growing nearby.

The Wine Program and Broader Experience

The restaurant's wine list earned Wine Spectator's Best of Award of Excellence in 2023, a distinction that reflects both depth of selection and the care taken in pairing it with the food. Beyond the dining room, the restaurant offers guided American Whiskey and Tequila tastings for small groups — experiences that fit naturally within a kitchen philosophy built around exploring the flavors of the American Southwest. Whether you're at a table on the patio or in the Wine Cellar for a private dinner, the sense of place that defines Santa Fe is present throughout.
