The story
Holbrook House describes itself as "a sophisticated throwback to a gilded era," and the setting earns that claim. Anchored inside the Conservatory at One Sansome — a glass-atrium landmark that underwent a $25 million renovation — the restaurant and bar occupy one of San Francisco's most architecturally striking civic spaces. The interiors, shaped by Jeff Schlarb Design Studio, frame what the team calls one of the city's most jaw-dropping bars. The effect is deliberate: part private club, part destination, entirely San Francisco.
Principal Phil Spiegel, a third-generation San Franciscan with deep roots in the city's upper-tier hospitality world — including the Julia Morgan Ballroom and Credo Restaurant — conceived the project as a symbol of reinvigoration for a recovering Financial District. The culinary direction falls to Executive Chef Sebastian Brown, who grew up in Key West, trained at the Art Institute, and spent years climbing the ranks at the Mina Group, including time as Executive Sous Chef at Michael Mina's Michelin-starred flagship. Rounding out the leadership is General Manager and Beverage Director Hernan Martinez, whose résumé spans Eleven Madison Park, Maison Premiere, and Cosme in New York before a turn at Cotogna in San Francisco. Director of Culinary Services Larry Finn brings further depth, with stints at Union Square Café, Café Gray under Gray Kunz, and Restaurant Gary Danko.
The menu leans into California cuisine, celebrating local and seasonal ingredients across the full day. Breakfast is positioned as the city's most elevated morning experience. Lunch unfolds beneath the soaring glass roof, with caviar and oysters available into the evening. The wine program has earned Wine Spectator's Best of Award of Excellence for 2025 — recognition that reflects Hernan Martinez's meticulous approach to the cellar and the glass.
Beyond daily service, Holbrook House is built for gatherings of almost any size — from intimate tables for two up to parties of 2,000 in the broader Conservatory space. It's a rare place where a weekday breakfast and a 500-person gala feel equally at home.
