A Family Legacy, Reimagined

What began in 1971 as a 24-seat Italian deli purchased on a whim by Diana An has grown into one of San Francisco's most storied dining institutions. The original deli — later renamed Thanh Long — became the foundation for four generations of the An family's culinary lineage, eventually giving rise to Crustacean when the family opened their Nob Hill location in 1991.

Now the story has a new chapter. Crustacean has relocated to 195 Pine Street in the heart of the Financial District, and the An family calls it "experience Crustacean reimagined." The move brings fresh energy to a restaurant that has long held a place in San Francisco's collective memory — and earned a Wine Spectator Award of Excellence along the way.

The Woman Behind the Food

At the center of everything is Chef Helene An, widely celebrated as the Mother of Fusion Cuisine. Born into Mandarin aristocratic lineage in Vietnam's Imperial City, Helene grew up surrounded by private chefs versed in Vietnamese, Chinese, and French traditions. After fleeing Saigon in 1975 with her daughters and arriving in San Francisco as a war refugee, she channeled those memories into the family deli's menu — blending the flavor profiles of home with ingredients and techniques that American diners would recognize.

Her instincts were sharp. She noticed that Americans loved pasta, so she experimented with chow-mein noodles flavored with garlic and herbs. The result became legendary. As Esquire once wrote: "…beware — the garlic noodles could make you cry."

The Smithsonian Institution honored her with a Pioneer Award in Culinary Arts, and in 2024 she was inducted into the California Hall of Fame as the first to introduce Vietnamese cuisine to mainstream America. Her philosophy remains the guiding principle of every dish: "Food should not only look good but should be good for you."

What's on the Table

The Secret Kitchen® — Crustacean's concept-within-a-concept — remains the heart of the menu, producing the dishes that sparked a movement: AN's Famous Garlic Roasted Dungeness Crab™, served in the shell or out, and AN's Famous Garlic Noodles®, finished with roasted garlic and AN's Secret Sauce™. These are the plates that built the reputation.

Beyond the icons, the current dinner menu reflects the next generation's ambition. Tuna Cigars arrive with instant smoke, avocado silk, and tobiko caviar. King crab appears in a "Banh Khot" format. Dumplings range from Wagyu and bone marrow to shrimp and lobster with a spicy tamarind ginger emulsion. Himalayan salt block steaks — including A5 Miyazaki Wagyu — anchor the large plates alongside turmeric lemongrass branzino and ginger-poached sea bass over forbidden "risotto."

The Asian fusion approach here is not a trend but a tradition, one built over decades by a family that had to invent a new cuisine because no existing category could hold what they were making.

The Next Generation

Crustacean on Pine is spearheaded by Monique An, Chef Helene's daughter, alongside her husband Ken Lew. The broader House of AN family — five daughters, each with a defined role across the restaurant group — ensures that the legacy is both preserved and pushed forward. It remains, as they say, a family affair.
