A Boutique Steakhouse with Serious Credentials

Stake Chophouse & Bar sits on the upper level of 1309 Orange Ave in Coronado, directly across from the Hotel del Coronado and a short bridge from downtown San Diego. The setting is intimate by design — a boutique steakhouse where the details matter, from the fire-lit patio where guests linger over signature martinis and oysters to the carefully sourced proteins that anchor every plate.

The wine program is what first put Stake on the map for collectors and serious diners alike. With over 1,700 selections, it has earned Wine Spectator's Best of Award of Excellence for ten consecutive years — a distinction held by only three steakhouses in all of San Diego, and the only restaurant in Coronado to achieve it. Wine Director Nate Black, who brings more than 25 years in the beverage industry, curates a list that balances old-world elegance with new-world range, and the sommeliers are on hand to guide pairings for any table.

The Kitchen and the Cuts

Executive Chef Matt Sramek leads the culinary program with a biography that reads like a tour of California's most demanding kitchens. A Le Cordon Bleu graduate, he trained alongside Bruno Lopez at The Ritz-Carlton and Douglas Dodd at Hotel Bel-Air, represented the United States in the Trophée Passion competition organized by l'Académie Culinaire de France in Paris, and worked under Thomas Keller at Bouchon Beverly Hills before moving to San Diego. His philosophy is direct: the best cuisine is built from scratch using the highest quality ingredients.

That philosophy shapes the Californian steakhouse menu at Stake. Prime beef selections include USDA Prime, American Wagyu, and Japanese A5 Wagyu, sourced from around the world. Seafood arrives fresh daily. Sides are seasonal and locally sourced — a commitment that keeps the menu grounded in what California does best.

Signature Experiences

For guests who want the full picture, Chef Sramek offers the Stake Experience: a five-course tasting menu built around the table, with optional wine pairings and the flexibility to accommodate dietary needs. It requires full table participation and reflects the kitchen at its most expressive.

On Mondays, the Porterhouse Dinner for Two offers a more focused three-course format built around a 32oz Allen Brothers Porterhouse — a straightforward, satisfying way to start the week.

The spirits list is equally considered, with rare bourbons including Pappy Van Winkle and multiple Whistle Pig expressions sitting alongside an extensive selection of Cognacs, Armagnacs, and single-malt Scotches. The bar program is not an afterthought.

Stake also offers complimentary car service to Coronado residences and hotels on Wednesday through Sunday — a small but telling detail about how the restaurant approaches hospitality.
