The story
Chef Gary Boatman's Silo Prime occupies a particular kind of confidence. Housed at 401 S. Alamo Street in the heart of San Antonio, it shares an entrance with the lively NONNA Osteria — but the two quickly diverge. Walk through the door and the hallway splits: one direction pulls you toward the warmth and noise of an Italian osteria, the other draws you into something altogether different.
Silo Prime is the steakhouse that doesn't need to announce itself. Moodier lighting, darker furnishings, quieter environs — the room is built for conversation and contemplation. At the center of it all, sky-high flames leap from a shiny steel grill anchoring the open kitchen, a visual anchor that reminds you, quietly, why you came.
Wine Spectator's Best of Award of Excellence — earned in 2024 — reflects what serious diners already know: that a steakhouse lives and dies by the quality of what's on the plate and what's in the glass. Silo Prime earns both distinctions. The wine program is extensive enough to satisfy the kind of guest who lingers, and the kitchen, under Boatman's direction, keeps its focus on the fire.
As food writer Paul Stephen put it, Silo Prime is "the leather and whiskey cool older uncle" — a description that captures something real about the atmosphere and the intent. This is a steakhouse for adults who appreciate restraint as much as richness.
Dinner is served Tuesday through Saturday, beginning at 5:00 pm. The private dining options make it a natural choice for occasions that call for something more considered than a typical night out.
