The Charter Oak

Chef Christopher Kostow's St. Helena restaurant celebrates seasonal American cooking with hearth-fired dishes and produce from its own 3.5-acre farm.

The story

Crafted with passion, served with love

A Napa Valley Table Built Around the Land

The Charter Oak is the work of Chef Christopher Kostow — the same chef behind the Michelin three-starred The Restaurant at Meadowood — and his co-owner and partner Martina Kostow. Where Meadowood reaches for precision and formality, The Charter Oak reaches for something equally considered but fundamentally different: a celebratory, family-style table where the food is, in the restaurant's own words, "deliberately simple and unadorned."

The address on Charter Oak Avenue in St. Helena puts the restaurant squarely in the heart of Napa Valley, and the kitchen leans hard into that geography. Vegetables come from the restaurant's own 3.5-acre farm, located just half a mile away and directed by Zac Yoder. What grows there shapes what arrives at the table — raw farm vegetables with a fermented soy dip, kohlrabi from the hearth with seaweed drippings and cultured dairy, a daylily salad with pole beans and aged ham XO. The connection between field and plate is not a talking point here; it is the operating logic of the menu.

Fire, Simplicity, and Seasonal Craft

The hearth is the kitchen's focal point. Grilled meats and fish drive the savory menu — a Klingman Ranch pork chop with broken leek romesco and pistachio, hearth-grilled chicken served with fat drippings and papalo, a grilled Denver steak finished with beef fat sofrito. The cooking is seasonal American at its most honest: strong technique applied lightly, so that the ingredients carry the weight.

Starters range from the Charter Oak's house-cultured bread to grilled octopus with pearl onions and lardo, to kaluga hybrid caviar served on a grilled potato flatbread. Desserts keep the same register — an upside-down rhubarb cake with pumpernickel and rye, a burnt chocolate cream with hearth-roasted cocoa nibs, a soft serve made from Jersey cow's milk.

The wine program has earned Wine Spectator's Best of Award of Excellence, a recognition that reflects the depth and curation of a list that spans Napa producers alongside selections from Burgundy, Rioja, and beyond. The bar program follows the same philosophy as the food: simplicity and a genuine reverence for local products.

Room for Everyone

The Charter Oak accommodates more than a quiet dinner for two. Weekend brunch runs Saturday and Sunday, a Locals' Lunch menu is available on weekdays, and the space is set up for private events of all sizes — from intimate gatherings to full exclusive-use occasions and offsite catering. A Yurt Village extends the experience outdoors. General Manager Eli Snowdon leads the floor, and the overall effect is a room that feels genuinely welcoming without relaxing its standards.
