Prasino

Prasino in St. Charles brings sustainably sourced, scratch-made American cuisine to every meal, from farm-to-table brunch to wood-fire grilled dinners.

The story

Crafted with passion, served with love

The name says it all. Prasino is Greek for "green," and that single word frames everything at this St. Charles, Missouri restaurant — the sourcing, the cooking, the beverage program, and the relationships that make it run.

Passion, People, and Product

Prasino's philosophy is built on three pillars: local farmers, a scratch kitchen, and a team that treats both as non-negotiable. Ingredients come from a roster of regional partners — Newman Family Farms, St. Isidore Farms, Ole Tyme Produce, La Bonne Bouchee Authentic French Bakery, and Clementine's Naughty and Nice Ice Cream among them. These relationships aren't decorative; they shape the seasonal menu and drive the weekly features that keep the kitchen moving with what's fresh rather than what's convenient.

The kitchen runs a wood-fire grill alongside a full scratch operation, and that combination shows across all three dayparts. Weekend mornings bring a farm-to-table brunch that spans eggs Benedicts on pretzel croissants with truffle hollandaise, birria skillets, stuffed French toast, and housemade crepes. Lunch and dinner open into a wider American eclectic range — lobster stuffed avocado with chili beurre blanc and mango chutney, sesame-crusted ahi tuna, P.E.I. mussels in garlic chili butter, wood-fire grilled bricked half chicken, and a double bone pork chop with candied bacon and bourbon Brussels sprouts. The dinner menu even extends to a sushi program (Tuesday through Saturday), with rolls built around fried Maine lobster, blue crab, and spicy tuna.

A Bar Program to Match

The beverage side earns its own attention. Prasino runs what it calls a farm-to-bar program — artisan cocktails made with small-batch spirits, a rotating selection of craft beers, and a wine list that earned a Wine Spectator Award of Excellence in 2023. That recognition reflects a genuine commitment to sustainable and vintage wines rather than a generic list, and it's woven into the same sourcing ethos that governs the food.

Private Dining and Events

Prasino handles gatherings of almost any scale. Private dining in-restaurant accommodates up to 40 guests; a full restaurant buyout opens the space to up to 175. For something more intimate, the team also offers in-home chef dinners for up to 25 guests, as well as offsite catering — making Prasino a natural choice for celebrations that need more than a reserved table.

For a restaurant grounded in organic, locally sourced American cooking, Prasino delivers the kind of consistency that turns a philosophy into a dining room worth returning to.
