La Nouvelle Bistro brings classic French cuisine to 102 Bridge Street, set inside the Jefferson House in St. Augustine's storied Lincolnville neighborhood. The space offers a choice of seating that suits the mood: a cozy dining room, a wrap-around porch, or a lush garden patio — each with its own character, none requiring a reservation, though tables can be secured in advance.

The People Behind the Kitchen

The restaurant is the vision of Chef Michael Lugo, who describes La Nouvelle as "the next story" — an opportunity to explore French bistro fare with what the team calls "an elevated edge." To anchor that ambition, he brought Matthieu Landillon from Marseille, whose coastal French roots inform the menu in tangible ways. The Bouillabaisse Marseillaise — lobster, white fish, shrimp, and mussels in a saffron rouille — reads as a direct expression of that background.

What's on the Table

The dinner menu moves through the full register of French bistro cooking without apology. Pour la table options open the meal: petite baguettes with salted butter and garden radish, Escargots de Bourgogne, Foie Gras Torchon with sauternes-soaked apricots, and a Steak Tartare built on Angus beef and quail yolk. A fruits de mer section features daily oysters, a Petit Plateau, and Black River Caviar alongside a Cocktail de Crevettes with cognac cocktail sauce.

Entrées stay faithful to the classics: Duck Confit with red wine-braised grapes and duck fat potatoes, Poulet Roti with pommes aligot and mushroom thyme jus, and a Côte de Boeuf — a bone-in ribeye carved for two — served with a choice of béarnaise, cognac peppercorn sauce, or truffle butter. A three-course Chef's Dinner Menu, changing with market availability, offers a focused seasonal progression with an optional wine pairing.

Brunch and lunch bring their own French bistro staples: a Croque Monsieur or Madame, Quiche Lorraine with bacon lardons and boursin, a Salade Lyonnaise with frisée, lardons, and poached egg, and a Jambon Beurre on baguette with brie and salted butter.
